Salmon Spread – Return of the Party Hits

Completing the trifecta of this week’s party recipes, the Four State Food Critic owes this next one to his sister-in-law, who makes this every year for the holidays. It is always a family favorite.

Salmon Spread

  •  15 ounces of red salmon (canned – no bones)
  •  1 tblsp lemon juice
  •  2 tsp grated onion
  •  2 tsp prepared horseradish
  •  ½ tsp liquid smoke
  •  8 ounces of cream cheese (softened)
  •  ¼ cup chopped pecans
  •  2 tsp chopped parsley
  •  Salt and pepper to taste

Simply mix all of the ingredients together (except for the nuts and parsley).  Refrigerate the mixture for at least three (3) hours.  Sprinkle with nuts and parsley before serving.

Break out a serving knife and a big bowl of crackers and stand back.  This one has folks standing around the table at our house, waiting for a turn.
