If you’re anything like the Four State Food Critic, time is
of the essence in the evenings.
Shuttling kids to school events, meetings, music lessons, and other
social activities leaves little time to prepare dinner. Today I’ve got an easy and excellent main
dish that only takes about 20 minutes from start to finish, so there’s no
excuse for not having a nice home-cooked meal.
Pork with Mustard

Pork with Mustard
Sauce
- 4 thin (½ inch or less) center cut boneless pork chops
- 1 cup fat free or 2% milk
- 4 tablespoons Dijon Mustard (or Spicy Brown)
- 6 green onions, diced
- Salt and pepper to taste
- Cooking Spray
Salt and pepper the chops.
Heat a pan over medium-high heat.
Coat with cooking spray and add pork to the pan, cooking about 3-4
minutes each side or until browned.
Remove pork from the pan and set
aside (cover to keep warm). Reduce the
heat to low, add in milk, and stir constantly to scrape and loosen the brown bits
in the pan (de-glazing). Stir in the
mustard and green onions and mix well, incorporating all of the flavors. Return the pork to the pan; cover and cook
for 2 minutes, turning to coat with the sauce.
Serve these over polenta or grits, taking a spoon and adding
a nice dollop of the sauce over the pork.
This also goes well with a steamed green vegetable, like green bean or
broccoli.
The creaminess of the sauce has a nice tang provided by the Dijon mustard.
